Ground Beef Tacos 100 grams lean organic ground beef
Lettuce leaves
1 tablespoon finely minced onion
1 clove crushed and minced garlic
Dash of garlic powder
Dash of onion powder
Dash of dried oregano
Fresh chopped cilantro to taste
Cayenne pepper to taste
Salt and black pepper to taste


Brown ground beef.
Add onion, garlic, and spices. Add a little water and simmer gently for 5-10 minutes. Add salt to taste.
Serve taco style in butter lettuce or romaine leaf mock tortillas or with a side of tomatoes or salsa.


Fried Chicken Tenders


Ingredients:
100g chicken
1 T milk
1 grissini
Seasonings (salt, pepper, paprika, ground red pepper, garlic powder)
1/8 t oregano
1/8 t paprika
1/8 t black pepper
1/8 t salt




Directions:
Preheat oven to 350.Slice chicken breast into 3 tenders. In small bowl, mix milk and any seasonings you prefer. Grind grissini in food processor until it is a powder. (I use my coffee grinder.)Put grissini powder in a separate small bowl. Toss chicken in the milk mixture to coat well. Then one at a time, place chicken in grissini powder and coat both sides of chicken. Place chicken in glass baking dish and bake 30-40 mins, turning over halfway through. In last 5 mins, turn on broiler and broil 2-3 mins each side. Serve immediately.



Garlic & Spinach stuffed chicken










3.5OZ CHICKEN(BONELESS,SKINLESS)




3 CUPS FRESH SPINACH
3 GARLIC CLOVES, MINCED
1OZ OR 2TABLESPOONS OF LEMON JUICE(FRESH SQUEEZED) (I would decrease the lemon, it was a bit much.)
1 MELBA TOAST ROUND
1/2 CUP BROTH

Directions

POUND OUT FLAT THE 3.5 OZ OF CHICKEN (I put the chicken in a baggie so it didnt squirt all over and used my rolling pin because I dont have a meat hammer). SAUTEE THE SPINACH WITH THE LEMON JUICE and half broth AND GARLIC. MOUND SPINACH IN MIDDLE OF CHICKEN AND ROLL UP. TOP WITH SPICES/HERBS OF CHOICE AND ROLL IN CRUMBLED UP MELBA TOAST, croutons or breadcrumbs. PLACE IN BAKING PAN ADD BROTH. BAKE @ 350 FOR 30 MIN.
